Happy Wednesday!! This has been a weird week for me thus far, but I'm going to roll with it. I was out sick on Monday because of an allergic reaction to walnuts that I had on Sunday night that landed me in the hospital... just a typical day in the life of me, but more on that another day. Let's talk WIAW! As always and forever, thank yous to Jenn over at Peas and Crayons for hosting the bloggy partayyy.
I wish I could stick to theme this week and post tons of awesome healthy Holiday recipes, but I just haven't felt in the Christmas spirit for a while...anyone else feeling that way? Maybe it's the weird weather...who knows. I did, however, whip up some super easy Holiday treats Monday night for the girls at work.
Check out this quicky how-to, so you can make them for your friends and family this Holiday season. I've been on the hunt for a simple but delicious Holiday cookie to make for my managers, but chances are I will just make my favorite go-to cookie/bar recipe Healthy Dark Chocolate Oatmeal Bars made vegan with a chia egg instead of a regular egg. They're just so good and easy to make, they're hard to pass up.
In other news, I should not be allowed to go to Trader Joe's...ever. My mom asked me if I wanted to take a ride with her to the store... $70 later we barely made it out of there.
You're welcome Madre. You're welcome. Doubt I will be invited for a grocery run anytime soon, but that's not discouraging me from sharing these awesome goodies with all of you! Favorite call outs from this foodie stock pile: Luna Bars (the only way I get a breakfast some days), edamame (super easy protein source to throw onto salads or have on the side with dumplings or sushi), Multigrain Pita Bite Crackers (they're just plain good), Organic Pumpkin (always need a can on hand...you never know when you may need some), and a few more....
Chicken-Less Pulled Chicken- ummmm AMAZING. BBQ Pulled Pork is the ONE SINGLE DISH that I crave as a vegetarian. I know it's absurd and random, but I just can't smell that sweet barbeque-y goodness without wanting to dive right on in. You can imagine my excitement when I found this gem of a dish in the prepared vegetarian foods section of my local TJ's. And it's delishhh. Better than I expected :)
And with 240 Calories, 4 grams of Fat, and 34 grams of Protein to boot....where can you go wrong? Make it a meal with a slice of multigrain sourdough and a side salad, and call it a night.
Mini Cafe Twists- A hidden gem in TJ's if you ask me. No dairy, no butter, no eggs... whaaat? A deliciously decadent vegan treat?! Yes my friends, these flaky, cinnamony, sugary treats are vegan and absolutely divine. I have to display some serious self restraint when it comes to these bad boys. It is difficult NOT to eat the entire box in one sitting.
So this is a totally random WIAW post, but I wanted to share some of my recent essentials slash obsessions have been. First of all, when it comes to Holiday shopping you need to have energy (and lots of it), and you need to stay hydrated. This photo was taken before an Urban Outfitters sample sale that my cousin and I went to recently. Believe me, we needed it all. Cliff bars give you a boost of energy and keep you full for a good amount of time since they are packed with protein and fiber. They are always my go to breakfast/snack if I am on the go.
And coffee, of course. Literally I do not think I could make it through a single day without some form of caffeine. My latest obsession has been a cup of regular coffee with one shot of espresso, unsweetened soy milk, a dash of pumpkin pie spice, and a sprinkle of truvia. Divine comfort in a mug.
I've also been very much obsessed with brussel sprouts. Check out my Friendsgiving post to see my favorite way to cook these bad boys (hint...lotsa gah-lickkk!)
Bulmer got to visit with Santa this past Sunday and tell him everything that he wants for Christmas. Though I didn't hear his wishes I'm guessing....sneakers to chew on, fluffy toys to rip stuffing out of, black lacey thongs (his favorite these days...), and some good ole' yak bones. But those are just guesses, who knows what's goin on in that little pup's head :)

WIAW: Friendsgiving
This past weekend my friends and I decided to have a last minute Friendsgiving. What started out as my friend inviting us over to watch the Newlywed’s on DVD and order take out, turned into an autumn wine filled feast ending with hooting and hollering over Magic Mike watching a classy film ;) A bit different than the original plan, but SO much fun.
I was especially excited for Friendsgiving because there were a few recipes that I had been dying to try. I revamped my Quinoa Stuffed Acorn Squash to be more crowd friendly and made brussel sprouts for the first time (both vegan). With Thanksgiving right around the corner TOMORROW, I decided to share some of our recipes with you :)

Roasted Brussel Sprouts with Garlic Salt
"Dinner" side of the table. My friend Susy made mozz stix from Pinterest. I did not partake in these cheesy little guys, but my friends said they tasted kind of like healthy mozzarella sticks. Not sure if that's good or bad? We also had french bread and lots of wine.

Dessert side of the table. My vegan re-vamped dark chocolate chip oatmeal bars with tons of extra spices for the season (recipe to post soon), and my friend's chocolate cake with vanilla icing. BOTH vegan! The chocolate cake was Ah-Mazing. So decadent and chocolatey. The secret ingredient is apple cider vinegar, who knew?! The recipe has been in her family for generations. So glad we were able to have a slice (or two) of this home-made heaven.

Quinoa with Raisins and Butternut Squash-
The measurements in this recipe are not exact because I just kept adding cinnamon, salt, and pepper to taste. Feel free to add spices to your liking as well!
Ingredients:
1.5 cups quinoa
3 T balsamic vinegar
1 T cinnamon
¼ cup of raisins
1 cup diced butternut squash
olive oil
a few pinches of salt and pepper
Instructions:
1. Preheat your oven to 400 degrees.
2. Cut butternut squash in half, scoop out the seeds, and dice into ½ inch sized pieces.
3. Spread squash out on an aluminum foil lined baking sheet. Drizzle with olive oil, and evenly sprinkle on a tablespoon of cinnamon, a pinch of salt, and a pinch of pepper. Toss to coat.
4. Bake squash for about 20 minutes, flip/toss, and bake for another 20 minutes (or until soft and golden brown).
5. While the squash is baking, put the quinoa and water into a pot and bring to a boil. Let boil until all of the water is absorbed (about 8 minutes). Remove from heat and fluff with a fork.
6. Add raisins, balsamic vinegar, 1 tablespoon of cinnamon, 2 pinches of salt, and 1 pinch of pepper to the quinoa. Stir until combined.
7. Add butternut squash to the quinoa mixture, and combine.
8. Season to taste, and enjoy! This dish can be eaten hot, cold, or at room temperature, and it’s still delicious :)
This is literally one of the simplest recipes in the world. Also, who wouldn’t love a vegetable that comes on a crazy looking stalk?!
Ingredients:
1 brussel sprout stalk
3 tablespoons of olive oil
2 tablespoons of garlic salt (I used McCormick's Gourmet Garlic Salt. It’s AMAZING.)
1 teaspoon of kosher salt
2 teaspoons of pepper
Instructions:
1. Preheat your oven to 400 degrees.
2. Cut the individual brussel sprouts off the stalk, and trim the stems off of each sprout.
3. Cut the brussel sprouts in half, and place into a bowl.
4. Add the olive oil, garlic salt, salt, and pepper, and toss until combined.
5. Spread the brussel sprouts evenly on an aluminum foil lined baking sheet, and bake for 20 minutes.
6. Remove tray from the oven, and lower the oven temp to 350 degrees.
7. Toss the brussel sprouts, and return to the oven for about 20 more minutes. Keep an eye on them in the last 10 minutes or so. You want them brown and crisp, but not burnt!

said I was going to post which acorn squash recipe I decided to try?
Welp....better late than never!!
I
chose the Quinoa-Stuffed Acorn Squash
from about.com! I made a few alterations to the recipe, however, to accommodate
what I had in my pantry and my personal tastes. Here is the recipe with my
adjustments:
Quinoa-Stuffed
Acorn Squash-
Ingredients:
21 acorn squash- approximately 1 tbsp
vegan margarineolive oil - 1 cup quinoa
- 2 cups vegetable broth or water (I used water)
2 Tbsp minced fresh parsley(didn't have any...)1/4 cup minced onion(I was too lazy....)- 1/4 cup raisins
1/4 cup candied or regular pecans(I'm allergic)- 2 Tbsp balsamic vinegar
- 2 tbsp olive oil
2 tsp nutritional yeast (optional)- sea salt and fresh ground pepper, to taste
Preparation:
Pre-heat
oven to 400 degrees.
Slice acorn squash in half and remove the seeds. Spread a bit ofvegan margarine olive oil on the inside of the
squash, then place on a baking sheet, cut-side down, and bake for 20-25
minutes, or until soft.

And that's it! This makes amazing
leftovers as well. I diced up the leftover acorn squash and added it into the
quinoa with a dash of cinnamon. Yummy lunch for work!

What I Ate Wednesday: A Day in the Life
As always, a big thank you to Jenn over at Peas & Crayons for hosting this crazyyyy party that we all love so much each and every week :)
Let's get started shall we? I am gonna work backward and start with Monday's day of
MONDAY:
Breakfast was and has been my work day go-to. 1/2 cup of rolled oats, 2 tablespoons of quinoa, 1 tablespoon of chia seeds, 2 tablespoons of homemade apple butter (no sugar added woo!), 1 ripe banana, pumpkin spice, truvia, and about a 1/4 cup of light soy milk and 1/4 cup of water (I usually just throw it in there though and don't actually measure it out).
Lunch was a KILLER salad. Literally best to date. Organic spring mix, chopped tomato, brown rice, avocado, hummus, seven grain crispy tenders, and light greek dressing. delishhhh. I use these vegan crispy tenders. They are amazing. Taste like the real thing!
Snack around 3pm was a bag of sliced golden delicious apples. Hit the spot!
Dinner was after a quick gym session, and was also another recent go-to. Organic black beans, frozen roasted corn, a can of tomatoes, and farro with taco seasoning, garlic powder, salt, and pepper then topped with diced avocado. So quick, simple, and filling. I ate this with some tortilla chips on the side.
Dessert per usual was a handful of Ghiradelli Dark Chocolate Chips. Unpictured because I ate them too quickly. Sorry I'm not that sorry....
SUNDAY:
Brunch please...it's Sunday. I did not need to be up at anytime, so I slept til 10am. And it was glorious :) I woke up with a cup of coffee with soy milk and a bowl of Kashi Heart to Heart combined with Kashi Go Lean Crisp Cinnamon Crumble topped with a banana and a dash of pumpkin spice. This was the first bowl of cereal I have ever had with soy milk. The verdict? I loved it!!! I became accustomed to the horrible stomach aches that came with my morning cereal, but I felt perfectly fine after this. Success!
Snack a few hours later was a fat free pumpkin raisin spice muffin that I had baked the night before, toasted and topped with homemade apple butter. Delish. So autumnal and festive. I love it. You can find the recipe on my post from Monday. Oh, and I had more coffee...

Dinner was three slices of Roasted Vegetable Pizza from Trader Joe's (it was dairy free!) topped with nutritional yeast and balsamic vinegar. I am just starting to use nutritional yeast, and I have yet to decide how I feel about it. It's ALL over the blogosphere, so I figured it was about time I started to use it. It's not quite what I expected. I don't dislike it... but I don't know if I like it yet. I'll get back to you on that one. I also had spring mix topped with avocado and more balsamic vinegar on the side.
Dessert was a bit of soy ice cream with Halloween themed Annie's Bunnies and a sprinkle of cinnamon and cocoa powder. Soy ice cream is another new thing I've tried in the past week. I am starting to like it, which is exciting. Mind you, this is NOT ice cream. I expected it to taste just like ice cream as I took my first bite. Boy, was I shocked. Now I take it as it's own entity, and I enjoy it as a treat every so often after dinner.
And that's a wrap!! I carried on forever...sorry bout that. Figured I owed you all, though :) Now a few questions for you all....
