What I....Wednesday!



Welcome to another edition of What I Ate Wednesday!!

As always, a huge thank you to Jenn for hosting the blogarty (blog+party… not a word, but it’s fun to say right?...) This week I wanted to change things up a bit for my post and categorize my eats and activities differently. More of a “What I…..” Soooo here goes nothing!!

What I am…. Baking!


A new version of my staple Healthy Dark Chocolate Chip Oatmeal cookies (find the recipe in this post)!


For this version of the cookie, I wanted to add a little something to make the cookies more substantial, almost like a trail mix cookie. I am allergic to nuts, so those were not an option. Instead, I threw some organic raisins and Chappaqua Crunch Simply Granola with cranberries.


Let me tell you… these were AWESOME. The granola added a bit of crunch while the raisins added a moist chewy texture. These cookies had it goin on!!

Egg White Frittata with Sargento Mexican Cheese and diced tomatoes.


Made it a meal with Alexia Sweet Potato Tater Tots, carrots, and guac!

The yummiest, messiest, summer sandwich EVER. Toasted Nature’s Promise Whole Grain Bread, balsamic marinated and sautéed mushrooms, guacamole, sliced local tomatoes, Athenos Reduced Fat Feta, and romaine lettuce.

What I am...Buying! (at the grocery store)

 
Yummy Earth Organic Gummy Bears!!! I was SOOO excited to find these at Home Goods (of all places right??) because since giving up artificially flavored and preservative filled foods, I have been unable to find a gummy alternative that I feel is up to my new standards. These fit the bill. It’s not like I am frequently craving gummies, but hey, it’s nice to have the option!


Nature’s Promise Organic Raisins.


Green Mountain Coffee Colombian Fair Trade Select. Really has a nice bold flavor, and Fair Trade to boot! So your coffee tastes good, AND you can feel good about drinking it.


Coconut Chocolate Chip Clif Bar. I really enjoyed this bar. My store was all out of my go to Chocolate Chip Clif Bar, so I figured I would give this version a try! The taste is pretty similar to a rice crispy treat in my opinion. Not too shabby.

Nature’s Promise Organic Cinnamon Graham Sticks. Ehhh these are ok. I was rather disappointed to be honest.  I was expected a much more powerful cinnamon flavor. Underwhelming…


Chappaqua Crunch Simply Granola with cranberries. Love this stuff. I have used it in cookies (see above), as  a froyo topping, as a greek yogurt topping, in homemade trail mix, and just by the handful!!

  2. I have been experimenting a lot with baking things in my microwave. Single serving recipes for the new college girl! :)

    This week I ate some steamed yellow squash, not new, but I hadn't had any in a long time. Also new were frozen cranberries!

  4. oooo... cinnamon graham sticks. Those look fantastic! I love seeing people's snacks, they're always so interesting, and then I want them, but then we don't have them here. :( But then I make them myself, and then I eat them myself. Yess!

  6. Oh your lunch looks delicoius! I've never heard of that Clif Bar flavor before.. I can't imagine it being anything but amazing :)
